Becky Lee's Sweet Chili:  Don't let the name fool you, this sweet chili also has a bit of a kick.  Also, Becky Lee Wetzel and Wild Banshee are one and the same.  This chili is good in a bowl, but it is perfect on cheese fries and nachos.

Flat Iron Steak Burritos:  These burritos are not authentic Mexican food, but they are authentically delicious.  The meat and the Triple Threat Topping set them apart.

Chicken Enchiladas:  The nuts and bolts of this recipe came from the Joyful Mama.  The Mama should get some credit, but in all honesty, her version was a little bland.  The Wild Banshee version is spectacular.

Fish and Chips:  I might have cheated a little bit on the "chips" portion of this recipe, but no one at my party that day complained.  The fish is tremendous, and it's always fun to break out the deep fryer.

Banshee's Spaghetti and Meatballs
Chicken Enchilada Suiza Bake:  This is Mexican inspired comfort food.  It's a Rachel Ray creation that has cilantro and tomatillos in starring roles.  Well, that and cheese.

Banshee's Spaghetti and Meatballs:  I certainly did not invent the idea of spaghetti and meatballs, but I have altered this recipe enough that I do claim it as my own.  The key to this sauce is the red zinfandel in the early stages.

Rotisserie Chicken:  If you have the tools to do this at home, you should certainly give it a try.  The chicken is terrific as a main course.  It is also fabulous for shredding and putting into enchiladas, tacos, etc.

Shrimp Fajitas:  This is a simple yet tasty Mexican dish.  The marinade recipe will work just as well for steak or chicken as it does for shrimp.

Firecracker Grilled Salmon:  Despite the name, this salmon recipe is not very spicy.  Instead, the name represents the explosion of flavor that occurs with each bite.

Grilled Fish Tacos:  This very simple recipe is sure to be a crowd pleaser.  The chipotle lime dressing sets this dish apart.
