Cooking with Banshee: Caramelized Onion Dip

March Madness is getting down to the nitty gritty.  That's a perfect time to break out a new dip.  This Caramelized Onion Dip is casual in appearance but gourmet in taste.  I originally found this recipe at MyRecipes.com, but I made some minor alterations and added my own techniques.


Caramelized Onion Dip

Ingredients:
2 Tbs extra virgin olive oil
2 large Vidalia onions, diced
1/4 tsp dried thyme
1/2 cup grated parmesan cheese
1/3 cup cream cheese
1/3 cup mayonnaise
1/3 cup sour cream
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp Tabasco
1/4 tsp Worcestershire sauce

Directions:
Heat oil in a large skillet over medium heat.  Add onions and thyme to the pan.  Sauté onions for 5 minutes, stirring frequently.  Reduce heat to low.  Cook onions, stirring occasionally, for approximately 20 minutes or until soft and golden brown.  Remove the pan from the heat.

Add sour cream, cream cheese, mayonnaise and parmesan cheese to the pan.  Stir until all cheeses are melted and blended.  And remaining ingredients and stir until blended.

Transfer to a serving dish.  Serve warm with crackers, tortilla chips or pretzels.  Enjoy!
